I currently serve as Executive Chef at La Parguera Plaza Hotel, overseeing culinary operations across multiple concepts within the property. My focus centers on revenue performance, operational structure, menu engineering, and maintaining disciplined standards of quality and execution.

I lead teams with a systems-driven approach—prioritizing consistency, efficiency, and guest experience while aligning kitchen performance with overall hotel objectives.

What a great restaurant! This place is a must for visitors! Everything on the menu was fantastic. We had a reservation for 12 ppl, and the staff was very accommodating! This is a beautiful place, with amazing food and drinks, and the wait staff were fantastic!

We stayed at Parguera Plaza Hotel and had the pleasure of dining multiple times at their restaurant, Brújula. We enjoyed dinner there twice and also had breakfast, and every meal was excellent. For dinner, we tried the skirt steak, the fish with garbanzo beans and chorizo, the croquetas of the day, tuna tartare, and the filet mignon. Everything was delicious, fresh, and truly great quality. Breakfast was also fantastic — flavorful, well-prepared, and a perfect start to the day. Overall, Brújula exceeded our expectations. Highly recommended for anyone staying in La Parguera!

My husband and I stayed one night at the hotel and decided to eat at the restaurant. It was the best decision; the food was wonderful, and the service was excellent. Highly recommended. The next day, I had breakfast, which was included in the room rate, and ordered French toast. It was marvelous!

Great place. It is located inside a hotel. They don't have a lot of vegan options, but the vegetable mofongo was really really good! Nice breeze, music and great service!

Came here for dinner and enjoyed it very much. Food was delicious and on point. Service was excellent also. The vibe was chill with a great ambiance. It’s located up by the pool, come through the lobby off the street, down the steps toward the pool, and head to the back, can’t miss it.

Food is consistently fantastic, creative, high quality. If it’s busy and they are understaffed it can be tough service but always buena gente. Sometimes the music is too loud but the pool and open air is lovely Food: 5/5

The entire experience was absolutely outstanding, we were met by our server Diego, who was incredibly helpful and respectful. I was unsure what to order and he recommended the New York Strip with their special puerto rican rice. It was absolutely amazing. The steak I had ordered medium rare, and it was cooked to perfection by their chef Ralf. My brother who I dined with ordered the Lobster and shrimp risotto, which was also delicious. The service was a 10/10, the food even better (if thats possible), and we will definitely be making another visit very soon. Huge thank you to the chef Marcos as well, he greeted us at the table and talked with me about my passion of cooking and becoming a chef. Very amazing people, and the food was just out of this world.
