During my time working alongside Chef Jeremie Cruz at Cassave Restaurant in El Conquistador Resort, I had the opportunity to contribute to high-level culinary productions such as this feature on Great Chefs of the World. This Shrimp Salad Pionono highlights the creativity and refinement that defined Cassave’s cuisine. I helped coordinate key aspects of plating and service during promotional events, consistently upholding the precision and excellence expected in a world-class resort setting.

This dish showcases the culinary excellence of Puerto Rico’s national culinary team, led at the time by Chef Jeremie Cruz, then the reigning national champion. As Sous Chef at Las Casitas Village—at the time the only five-diamond restaurant in Puerto Rico and part of El Conquistador Resort—I collaborated with Chef Cruz on events like this one, where we fused traditional island flavors with fine dining execution. These productions were more than televised features; they were expressions of teamwork, cultural pride, and technical mastery, in which I played an integral role behind the scenes.
